I created this fancy, easy and delicious Japanese inspired recipe, as an appetizer for my Mom’s birthday last weekend. I hope you love it as much as we did.
Ingredients (serves 2):
- 2 Hass avocados
- Wasabi powder mixed with a little water to make a light cream
- European cucumber thinly sliced
- Umeboshi (salted Japanese plums) if you don’t find these, Gari (the pickled ginger used in sushi) might work well.
- Roasted nori
- 1 Lime
- 1tsp olive oil
- Sea salt (I used matcha salt but that will be hard to find)
Cut one of the avocados in half and carefully peel the halves keeping their shape.
Mash the other avocado, add the wasabi cream, salt to taste and mix well.
Mix the lime, olive oil and salt (to taste) to make a tart light vinaigrette.
Fill the avocado halves with the mashed avocado mix.
On each plate, make a bed of cucumber, place the avocado half on top, drizzle the vinaigrette, garnish with the umeboshi/ginger, and finish with sprinkles of crunchy roasted nori.
