I created this recipe this week and it turned out delicious! Then, of course, I had to share it with you.
Ingredients:
- Bok choy
- Thin green beans
- Broccolini or broccoli
- Edamame
- Red cabbage
- Avocado
- Brown rice
1. Preheat the oven to 380 °F (bake)
2. Cut cabbage wedges and bake with a drizzle of olive oil and some sea salt, until tender but still crunchy.
3. Steam the edamame, green beans, broccolini/broccoli and bok choy, adding them to the steamer in this order. Once the edamame are almost ready, add the green beans and around 2 minutes after, add the broccoli and the bock choy for about another 3-5 minutes. Once done, sprinkle some sea salt.
All the veggies should be crunchy and green.
Be careful not to overcook them!
Serve with the brown rice (I wash it first with warm water and make it in the rice cooker only with water and a little salt), and avocado cubes.
Sauce (for 2):
- 2tbsp spoons Tamari sauce
- 2tbsp spoons toasted sesame seed oil
- The juice of one large lime
- 1 tsp honey
Mix all ingredients well and have each person serve on top of the veggies as desired.
