You will enjoy this quick, easy and savoury recipe if you like olives as I do. It’s tangy, complex and fresh flavour will go beautifully with many dishes or on its own.
Ingredients:
- Red cherry tomatoes
- Pitted green olives
- Pitted black olives
- Capers (the super small ones)
- 1 big lime
- Olive oil
- Sea salt to taste
Cut the tomatoes and olives in half or in tiny pieces and mix with some capers.
I like to have a balanced mix of all the colours, so that is how I choose the proportions.
Add the juice of one big lime, some olive oil and sea salt to taste. Mix well and enjoy on top of an arepa, toasted tortilla, or on a slice of good bread. As a side, it goes very well with quinoa and some hummus… Just an idea.
Here is an extra crunchy variation adding celery and radishes (just because I had some), on top of an arepa with mashed avocado. Delicacy!!!
