This is one of my latest delicious and nutrient full creations.
I could have it every week!
Ingredients (serves 2):
Lentil sprouts. I sprouted 1/2 cup of lentils for 2 salads. If you don’t do your own sprouts, you can buy them in some supermarkets. In Bogotá @germinados_sacramento has them, as well as other high-quality sprouts ( I like the fenugreek ones).
1-2 Hass avocados
2 thin organic carrots
2 radishes
8 organic cherry tomatoes
One broccoli florets
2 celery sticks
8 Green olives
Sweetpeas. As many as you like. I looooove them!
Cashews to garnis
- 1 Lime
- 1tsp olive oil
- 2tsp of Dijon Mustard
- Sea salt (I used matcha salt but that will be hard to find)
Make the vinaigrette in the same bowl you’ll use to mix all the ingredients. Cut everything and mix the tomatoes, carrots, celery and olives with the sprouts in the vinaigrette bowl.
Then serve in each plate and finish with the avocado, broccoli, sweetpeas and cashews.
